On another note, this Sunday is my marathon! I have been anxiously awaiting this day for the last few months….until yesterday when I saw that the predicted weather is 45 degrees and raining!!!  I am NOT looking forward to that at all! I am hoping that the rain will come after I cross the finish line 😉 One can only be so lucky! I am trying to stay really positive and hope that it stays away! Keep your fingers crossed for me! Also, if you follow me on instagram you will see that I have been eating a TON of fruits and veggies (figs, berries, bananas, brussels sprouts, spaghetti squash, zucchini, etc) to get in my carbs! I will do a full “What I Ate For Race Day” post next week! I have had several questions about that!

Enough about me, it’s time for you! I have a wonderful blueberry muffin recipe to share with you today! This recipe comes about again because I am trying to incorporate more healthy foods into the boyfriends diet! He loves Dunkin Donuts blueberry muffins, so of course I had to recreate one that was much more friendly on the waist line! These are sugar free and the nutrition stats are so good you can eat this jumbo size muffin as a snack! 🙂 Plus it packs in 6g of fiber (1/4 of your daily requirements) and almost 15g of protein, so it is guaranteed to keep you full!

Fit Ingredients

  • 1c (132g) whole wheat flour (I used Bob’s Red Mill)
  • 3/4c (62g) SunWarrior Vanilla Protein Powder
  • 1 tbs baking powder
  • Stevia, to taste
  • 1c (226g) unsweetened applesauce
  • 4 large eggs
  • 2 tbs pure vanilla extract
  • 1 tsp ACV (apple cider vinegar)
  • 1 1/2c (210g) fresh or frozen blueberries, thawed and rinsed (I used frozen wild blueberries)

  • large size muffin tin (or small if you’d rather more muffins)
  • non stick spray

Directions

1. Pre heat your oven to 350 degrees

2. Spray 6 large muffin tins with non stick spray.

3. In a bowl whisk together your dry ingredients: whole wheat flour, protein powder, baking powder and stevia.

4. In a second bowl whisk together your applesauce, eggs, vanilla extract and ACV.

5. Combine your wet ingredients with your dry ingredients and mix well.

6. Fold in your blueberries

7. Divide the batter evenly among 6 muffin cups.

8. Bake for ~27-29 minutes.

So, how did they turn out?! Extremely moist, sweet and loaded with blueberries!!! They were perfect! There were blueberries in every single bite!! Nothing is worse than a muffin that barely has any berries in it!! Plus these muffins come out HUGE!! Which, I absolutely loved! I hate small snacks! 🙂 I tossed them into ziploc bags so they were easy for us to grab and go on the run! And that way the boyfriend had no excuse as to why he ‘missed’ a meal! 😉

  1. Hi, When you call for stevia, do you use the powder form? If you use liquid stevia, do you usually specify it? I want to make sure I get the accurate ratio of wet/dry ingredients when I try some of your recipes (soon!) 🙂

    Second, you’re definitely gonna be in my prayers for your marathon! I hope that the rain stays at bay until you finish! There’s definitely nothing worse than having to run on a wet course!

  3. These look amazing. So good, that I passed them on to a friend of mine. However, she is trying to eat gluten free. Can you just sub almond flour for the whole wheat or would something else be better?
