Apple Pie Parfait

Happy Sunday! I hope you are having a great weekend! I thought I would throw a little spin into your weekend and give you an unexpected delicious fall recipe today! This recipe is quick, simple and packed with flavor and fiber!!! I hope you enjoy it! Have a fantastic rest of your weekend!

Fit Ingredients

Layer 1

  • 1/4c ground flax seed (I used Bob’s Red Mill)
  • 1 tsp (6g) chia seeds
  • 1/2c coconut milk (or water)
  • 1 1/2 tsp cinnamon
  • vanilla stevia (liquid), to taste

Layer 2

  • 3/4c (6oz) low sodium ricotta cheese (or cottage cheese/greek yogurt)
  • vanilla stevia (liquid), to taste

Apple Topping

  • 1/2 to 1 medium apple (80-160)*
  • 1/4 tsp butter extract
  • 1 tsp apple pie spice
  • vanilla stevia (liquid), to taste

Walnuts, optional

*If you want 2 layers of apple filling use a whole apple (160g), if you want one layer as I did in this recipe use half (80g).



  1. In a bowl combine all of your layer one ingredients and mix well.
  2. All the bowl to sit, stirring occasionally for about 30 minutes or until the flax and chia have absorbed the milk and the mixture is nice and thick.
  3. In a second bowl mix your ricotta and stevia.
  4. Meanwhile, dice up your apples.
  5. Place your diced apples, butter extract, apple pie spice and stevia in a microwave safe bowl.
  6. Heat the apples for about 1min and 30 seconds or until slightly softened.
  7. With a fork, slightly mash the apples leaving some larger pieces of apple.
  8. In your parfait glass layer half of your flax mixture, half of your ricotta and half of your apples (if using a double layer of apples).
  9. Repeat layers ending with the apple mixture.
  10. Top with walnuts if desired.
  11. Serve immediately.

So, as you are all well aware, fall is my favorite season! And I am literally counting down the days until the boyfriend and I go apple picking (which he is not looking forward too but at least he knows he gets a pie out of it!)! However, I have already started having apple pie cravings, so I decided to make a healthy, grain free version the other day. Well, all I have to say is, WOW!! Those apples are amazing!!! They tasted exactly like pie filling! I will definitely be adding in 2 layers of apples next time!!! And I think I may be using them as a topping to pancakes, waffles and may other things!! YUMMY!!! So, if you’re craving apple pie, this will definitely kick that craving…in a fit way of course! πŸ˜‰


I topped mine with some walnuts for crunch!

Yes folks, that’s right….FIFTEEN grams of fiber!!! Love it! πŸ™‚
