What I Ate Wednesday #15

Happy Wednesday! We have reached the middle of the week already! I have a few exciting things to share with you before we start oogling over my food from yesterday! πŸ˜‰

The first big thing is that I have decided to move my site from being a blog to a self hosted site, which basically means I will be an official website! Yippee! What does that mean for you? It means only one thing for those of you who subscribe to my RSS Feed…that you will no longer be getting the automatic updates in your feed. So once it is switched over you will need to subscribe to the new site! Nothing big or complicated πŸ™‚ I will let you know when the official day is going to be, but as of right now it looks like it may be this Saturday!

Second, this Friday is my second post for the Recipe Redux challenge! Last month I posted this recipe and it was a huge hit! This month I have something even more exciting…well, at least I think so! πŸ™‚ So, be ready!

And lastly, the picture of the site are going (hopefully) to improve drastically!!! My amazingly wonderful Boyfriend bought me a new camera on Monday! I think it was him telling me that he is looking at bad pictures of good food everyday πŸ˜‰ We do eat with our eyes first, so I know how important the pictures are to the recipes!Β  Please bare with me while I start playing with it and see what magic this new camera can do! πŸ™‚

On to the food!!!!

Meal #1

Oooooo…..the picture from Instagram yesterday!! Brownie waffles! I topped them with white chocolate peanut butter, fresh raspberries and had some ricotta (not pictured) on the side! The recipe will be up tomorrow! πŸ™‚

Meal #2

Yes, the same cherries and cream ‘milk shake’ that I have been drinking like crazy! I’m in love with it! And yes, I know I promised you all the recipe….I just have so many to share I can’t keep up!

Meal #3

Baked egg whites with veggies, cheese and TVP! πŸ™‚

Meal #4

Ricotta, Pumpkin & Pecan Parfait

Meal #5

Homemade turkey & goat cheese meatballs, sliced cherry tomatoes, mashed cauliflower and fresh spinach sautΓ©ed in coconut oil! Yum!

Meal #6

Pumpkin Ricotta Cake (made especially for the BF after returning from Korea)! But of course, I had to ‘test it’ before he could eat it! πŸ˜‰ Recipe will be posted next week!

This month we are also talking about healthy habits that we are incorporating into our lives. The last 2 weeks I have been talking about making sure I maintain balance between everything I have going on. And I must say I think I am doing a very good job! I have no felt stressed or run thin at all! So, I am proud of myself for that. I have still yet to sit down with a book and just read for pleasure, but we can’t expect miracles πŸ˜‰ At least I have a good excuse….I have been baking like a maniac! So, really this only benefits you!

  1. Any reason you use only egg whites? Seriously egg yolks carry all the nutrition and benefits for your body. You can read many articles on Weston Price Foundation or paleo sites to support this.

    Also, are you newly paleo or something? For any particular reason? I have considered going paleo, but I like dairy (though I think it may be a problem for me 😦 )….I eat a LOT of healthy fats….

    I usually use a whey protein, but recently got a Garden of Life Raw protein and HOPE it’s okay…i’m kinda regretting it because is a grain based protein powder which is no-no for paleo, etc…but I didn’t realize it …oops.

    I’m also 31 πŸ™‚
    But the last few years have been a lot of stress, GI distress, anxiety, depression, etc …my body is basically burnt out…I can’t even run anymore…walking it is.. ..trying to figure out how to eat and beat my adrenal exhaustion. Ugh-aroo..

    • Hi Rach!

      Actually I do eat egg yolks ALL THE TIME!!! πŸ™‚ However, given the fact that I don’t like the taste of yolks and chocolate and the hazelnut butter (2tbs) has plenty of fat, I was in awesome shape already for that meal! I am very meticulous with my nutrition and meal planning, especially since I am running a marathon this weekend. I went to ASU for dietetics and am finishing my degree now, so I have read plenty on the benefits of egg yolks!

      And no, I do not follow a paleo diet or a vegetarian, or vegan or any other crazy madness type of thing! I eat the things I like, when I want them. I don’t restrict from any particular thing unless it’s giving me issues, which right now I am having problems with breads and rice. I am also ADDICTED to dairy. I eat about 2-3 yogurts a day plus 2-3cups of ricotta and other cheeses. I could never stop eating dairy. I also use casein protein which is milk based.

      I have the garden of life raw protein as well, but have never used it as a shake. I use it in my baking.

      I’m sorry to hear about all of the stressors you’ve been going through the last few years. I was also out of running for 8 months due to extremely low iron, despite the fact that I eat red meat, beans, coniferous veggies and such more than one probably should. Thankfully we were able to find a solution after 6 months of testing with no exact reason behind the drop.

      However, I have found that the changes in my diet have greatly impacted my energy levels and have thus assisted in me being back up and ‘running’ πŸ™‚

  3. Wow everything you had to eat looks delicious, I am especially loving those homemade turkey & goat cheese meatballs! I love goat cheese so I am sure I would love those! πŸ™‚ AND Brownie waffles?! Those are calling my name!

    • I am so glad you are liking the recipes Sarah! I eat those meatballs at least 2-3 times a week! They are great to make ahead and pack for lunch! Or they are amazing with eggs and fruit for breakfast…and of course dinner! πŸ™‚ Let me know if you try them! Thanks for stopping by!

    Last book I read for fun was Reaper Man by Terry Pratchett. I pretty much have a huge Terry Pratchett obsession πŸ™‚

I have never heard of Terry Pratchett, but it sounds like a horror book to me!!

      • Haha, it’s actually not horror–Pratchett writes hilarious/irreverent fantasy novels. It’s “Reaper Man” because death decides to quit, and then no one dies/hilarity ensues. I rarely actually laugh at books, but this one had me giggling all the way through. Pretty awesome. And I love those weeks when there’s just TOO MUCH to post! I need one of those again soon.
