What I Ate Wednesday & Aruba

Happy Wednesday everyone! I am finally back home from my trip to Aruba with my cousin, Maria! We had an absolute blast! We arrived in Aruba around 1:30pm on Thursday and were changing for the pool by 2:45pm! The sand was so soft and white and the water so crystal clear and blue! It looked exactly like all the photos you see online! Everyday we got up, had a quick workout in the hotel gym, then showered, changed and headed down to the pool by 11am. We had amazing weather every day, except for Saturday. Saturday was overcast and we had a few sprinkles, but nothing that made the day a wash out! We enjoyed lunch by the pool every day, snacked on almonds, dried fruit, apples, bananas, watermelon, quest bars, cashews of course coffee with stevia (yes, I smuggled it across the boarder ;)) At night we enjoy the most amazing dinners! We had fresh grilled fish, a seafood buffet, grilled filet Mignon, sushi, steamed and grilled veggies and of course a few glasses of white wine! One night we indulged a bit and had some vanilla ice cream, sampled some different mini cakes and mini shots of chocolate mousse and tiramisu. The last night Maria tried the Coconut Gelato and I had some fresh sliced watermelon. Overall, we ate super healthy and I was extremely proud of us! We kept our clean eats in check and it made for a much more enjoyable vacation!

Here are some of the pics of our food…..I forgot to take a lot of them because it looked so good we just dove right in, but this is a sample:

My poolside lunch: fresh cantaloupe, grilled chicken breast, grilled pita bread and a small salad. It was so delicious! I ate this every day I think!

Petite Filet Mignon and Steamed Broccoli from Ruth’s Chris Steakhouse in our hotel. We ate there twice. Maria also got the petite filet topped with grilled shrimp and oven roasted tomatoes one night and steamed spinach the 2nd night

Brunch at La Vista. We had spinach and mushroom egg white frittatas with a side of fresh fruit!

Grilled Ahi Tuna and steamed mixed veggies at Aqua Grille. Maria had a scallop skewer and basmati rice! It was delicious!

One of our favorite poolside snacks! We found these totally clean apple fruit crisps and paired them with some raw almonds! Delicious!

Of course the ONE drink we enjoyed poolside when we were there…..well, I should say my one drink, Maria also had one at the swim up bar! πŸ™‚

As far as activities we pretty much spent our time laying pool or beach side. We also went para sailing, got massages, gambled a bit in the casino, went shopping and really just enjoyed relaxing and catching up on stuff. Maria lives 3.5hours away from me, so even though we talk via text daily, it’s hard to really catch up on the details of things! It was nice to just enjoy some girl time together!

Last but not least our first visitor on the island!!! πŸ™‚

Overall the trip was absolutely amazing! The last night though, something didn’t sit well (maybe my ahi?) with me and at 3 am (of the day we were flying out) I woke up extremely nauseous and could barely move out of my bed! I am lucky I even made our flight. It was definitely the most painful flight experience I have ever had. As soon as we landed back in NJ the boyfriend took us straight home, I fell into bed and didn’t move until about 3pm today! I had chills, fever, body aches, upset stomach and a pounding headache! ugh!Β  So, I apologize to everyone that has emailed me or left comments! I promise to get back to you tonight! Also, I want to apologize to Katie from Goober Nut’s Life for not putting in 110% effort in getting her guest blog out there yesterday! I was so sick and am just starting to finally feel slightly better!Β  So, please, if you missed her recipe remix on the blog yesterday, check it out! She did an awesome job! πŸ™‚

I am glad to finally be back home and blogging with you all full time again! πŸ™‚

  1. Sorry I wasn’t able to comment on this post yesterday! Was picking up my niece from the airport.
    You had some really delicious eats from Aruba, and I’m jealous of your lunch everyday!! Haha, such healthy eats! I’m glad you were able to stick with it and still enjoy a few treats here and there! That’s what a healthy life is all about, anyway. πŸ˜‰

    The last place I vacationed was a short trip to Dubai, and in less than a month the hubs & I will be vacationing in Santorini Island, Greece!

    • Now THAT sounds amazing Jessie!! I had a college friend from Dubai, but have never been and Greece just looks to die for!! How long will you be gone for? I’m sure you are going to have some delicious food there! I am in love with greek food!

      We had an amazing time! Thank you! I am just starting to get my appetite back, but it really stinks because I have barely eaten anything in 2 days and it has destroyed my energy to workout!! boo!! Hopefully I will be up and ‘running’ again tomorrow! πŸ™‚

        Oh your friend from college is one lucky girl. Dubai is absolutely beautiful. We will be gone for 10 days. I cannot wait for all the delicious food. I think I may be in a food coma once I get back though haha.

        • Nope! Because I would have been laughing out loud too! It’s a great addiction though! πŸ™‚ 10 days sounds amazing! And you’re supposed to come back from vacation in a food coma! That means you really enjoyed the food!! Until this year I would come back in a food coma every single time! It was bad….but oh so good! πŸ˜‰

            haha, and i’m sure ohh so worth it. Let’s just say thank goodness the hotel we are staying @ has a gym so I can get in a good workout most mornings before the day begins. I won’t feel so disgusting after shoving my mouthh full with food & alcohol. Especially Alcohol because it’s all illegal here in Kuwait 😦

          • Oh, that’s where you’re from?! That’s so neat! The alcohol will do much more damage than the food!! Be careful about that one! You won’t be getting out of bed to workout if you have enough of it the day before! haha Plus the alcohol makes you eat WAY more!!! At least you will be able to get great wine there as opposed to all tropical fruit drinks!
