Peanut Butter Granola Bars

One of my favorite things to always have on hand are protein bars. I have tried many brands and flavors over the years. If I like the taste, then they are usually filled with artificial junk! If they are mostly healthy, then they either have too many carbs, not enough protein, too little or too much fat or WAY too many calories! There is never a bar with the perfect combination for me! So, I had to come up with a way to fix that! Here you have it……homemade Peanut Butter Granola Bars! These bars have the perfect combination of protein, carbs and fat, plus anincredible flavor for a mid afternoon snack when I am not able to make something at home! I pre wrap them in plastic wrap and throw them in my freezer so I can grab one quickly on days when I am rushing around!

Fit Ingredients:

  • 1/2c (45g) granola of choice (can sub oats) I used this one in Vanilla & Flax
  • 3 1/2 scoops (80g) vanilla protein powder
  • 1/4c stevia (can use more or less to reach desired sweetness)
  • 1-2 tbs coconut flour
  • 1/4c (64g) Saratoga White Chocolate Peanut Butter (or nut butter of choice)
  • 1/4 c coconut milk
  • 1/8c (14g) cacao nibs (or chocolate chips)

  • large loaf pan

Directions

Line your loaf pan with parchment paper. Allow the parchment paper to hang over the edges of the pan. In a bowl, mix your granola, protein powder and stevia. In a separate bowl mix your peanut butter and coconut milk. Add your peanut butter mixture into your dry ingredients. Mix well! (This will take some arm muscle, so keep mixing!) Mix in your cacao nibs (or chocolate chips).Β  Once combined, gradually add in your coconut flour until the mixture becomes very hard to mix and mold able. (you do not want it to be watery). Evenly spread the mixture into the bottom of your loaf pan. Refrigerate for 4+ hours (this will allow them to set). Once they have set, cut into 5 bars. Individually wrap them in plastic wrap and store in the freezer for up to 1 month.

Well, I have to admit that I am totally addicted to these!! They had the perfect amount of sweetness, an overall amazing flavor and kept me full for 4 hours!!! These will definitely be going into my permanent rotation of on the go snacks! πŸ™‚

Calories: 203.5, Protein: 19.3g, Carbs: 12.2g, Fat: 9.2g (2g Saturated), Sodium: 9mg, Fiber: 3g (Net Carbs: 9.2g)

*Feel free to divide these into whatever size you like.Β  I actually made mine into 4 bars because a) I like lots of food and b) need more calories in my snacks to meet my macros for the day!
