What I Ate Wednesday #8

It’s that time of the week again where we get to share our delicious eats of the day! My eats are kind of basic this week since I am leaving for vacation Thursday and I am trying to use up the fresh veggies and fruits that I have on hand before we go! So, I apologize in advance if my meals seem boring this week! I hope you enjoy them! Next week I should have some delicious eats from our trip to Aruba! πŸ™‚

Meal #1

Homemade peanut butter granola bars (look for the recipe Friday!)

Meal #2

A homemade cinnamon crepe with peanut butter filling, strawberries and cacao nibs! A sweet, yet healthy breakfast to keep my sweet tooth in check! (recipe Monday!)

Meal #3

A fruit and veggie bowl made with spinach, chicken breast, 2 hard boiled eggs, ricotta cheese, fresh cherries, black pepper and coconut vinegar! Mmmmmm………………

Meal #4

A homemade meatloaf with spinach, steamed broccoli, avocado, Steel’s ketchup (the best stuff on earth!)

Meal #5

Siggi’s Greek Yogurt and Whole Raw Almonds

This month we are talking about what our favorite summer fruit is! And for all of you who follow my blog you know that my obsession is RASPBERRIES!!! I eat them with almost everything and you know I LOVE to bake with them!! πŸ™‚ I have also been using a lot of cherries in my baking and breakfast/lunch meals! I bought a cherry pitter and it has been a total life saver! I took the pits out of a pound of cherries in 5 minutes!! It is amazing! πŸ™‚

Before I finish up, I’d also like to give a quick thank you to Sunnie over at Modern Girl Nutrition! She hosted a giveaway for Manna Bread last week and I was the lucky winner!! How exciting!!! I will be sure to let you all know my opinions on what looks like amazingly delicious bread! If you’ve ever tried Manna Bread, let me know which is your favorite!   3. Leaving for vacation is already a great excuse to eat up what’s in the fridge. That crepe looks YUMMY, and was our accidental breakfast-themed dinner a few nights ago. Enjoy Aruba!

    • Hahaha!! Thank you! Yours always look insanely amazing too!! Trips plans changed a bit and I am now going with my cousin — the bf has a big big interview! But that’s ok…we will get in some much needed girl time! I will still be blogging and on instagram and twitter! Plus your post is Tuesday! πŸ˜‰
