Blueberry Oat Muffins (Bakery Size)

Serves: 3 (or you can make 6 medium size muffins)

Every once in a while 😉 I ask my boyfriend if he would like me to bake him anything specific and he usually replies with “those bars (which I have yet to post).” I make them for him every single week! He eats them all in 1.5 days and then asks for them again (yes, I will post the recipe soon)! Yesterday though he said, “blueberry muffins.” I almost fell over!! He wants something different?! WOW! I followed his response with, “Do you want a regular muffin, healthified muffin or protein packed muffin?” since he isn’t really one for my protein packed foods. He said healthy. Fair enough, that’s a happy middle ground for a fit chick 🙂 Any day he chooses healthy over full fat I jump with joy! Little does he know that the “healthified muffins” that he ate andliked were really protein packed!! If you’re reading this now love, sorry that you actually liked something packed with protein! 😉

Two with walnuts (for the boyfriend) and one without for me!

Fit Ingredients

  • 1c (80g) Oats
  • 1 scoop (~23g) vanilla or unflavored protein powder (I used whey)
  • 1/2c granular sweetener of choice
  • 2 tsp baking powder
  • 1/2c (124g) reduced sodium cottage cheese (I used Breakstone 30% reduced sodium)
  • 1/2c (113g) unsweetened applesauce
  • 3 tbs (46g) liquid egg whites
  • 1 tbs pure vanilla extract
  • 3/4 c (105g) blueberries (I used frozen wild blueberries)
  • 1/8c (14g) chopped walnuts, optional


  • 3 large size muffin tin (or 6 medium size)
  • non stick spray



Pre heat your oven to 350 degrees. Spray 3 large muffin tins with non stick spray. In a bowl combine oats, protein powder, granular sweetener and baking powder and mix. Add in your cottage cheese, applesauce, egg whites and vanilla*. Mix well. Gently fold in your blueberries. Divide batter evenly among 3 muffin cups. Sprinkle with walnuts, if desired. Bake for 28-30 minutes.

*You can also take all your wet ingredients and blend them in the blender before adding them to your dry ingredients if you don’t want any cottage cheese lumps, but after they were done baking I didn’t even notice them!

These muffins came out gigantic!! They were the size of a large muffin you would get at a bakery with half the calories, 3x the protein, half the carbs and barely any fat! They were extremely moist and full of flavor! It was love at first bite!! So much so that I ran back to my kitchen later that afternoon to start making other kinds (watch out for the influx of muffin recipes you might be seeing)!!

So moist!


Feel free to make these into 6 medium size muffins for a snack size or for people on lower calorie meal plans.

    I am just wanting to clarify the nutrition info you provided. You said, “Nutrition: (1/3 large muffins without nuts),” I was just wondering if this meant the nutrition info is for 1/3 of your large muffins or if you meant one of your muffins is 1/3 of what you would have in an unhealthy bakery muffin. Thanks for your help!

  2. This were really good! I might bake them a little longer next time because the middle was just a bit too moist, it almost seemed under cooked. I do have one question for you. For the nutriton of these muffins you said, “Nutrition: (1/3 large muffins without nuts),” does this mean the nutrition info you provided is for 1/3 of a large muffin? Or do you mean that one of these muffins is only a 1/3 of what you would find in an unhealthy bakery muffin? Thanks for the clarification!

    • Hi Becky — The nutrition is for 1 out of 3 muffins that the recipe makes. So for 1 entire muffin. Sorry yours seemed a bit undercooked in the middle. Like I tell everyone, the time is always an approximate since everyone’s oven cooks a bit different! Just use a toothpick to ensure doneness and you should be good to go! 🙂 Any other questions, let me know! And thanks for trying out the recipe! 🙂

    I hate to say this, but I bake these and they were aweful! Sorry, but they were not good at all. I followed instructions, baked as the recipe called and they were underbaked and when I tasted, they were very sweet, not cooked all the way. I baked them some more and they were burned. I was so disapointed, I was actually looking forward to tasting these.

    • Hi Alexandra,

      I am so sorry to hear that the recipe didn’t work out for you! They may not have cooked the same if you used a different size muffin tin (I used a large cupcake/muffin tin, not a regular sized one) or if your oven settings are different than mine. Every oven does bake differently, especially if you do not have a digital oven. Also, the sweetness will depend on what type of sweetener you used and how sweet your protein already was! Plus the sweetness of the blueberries that you use. I have received nothing but positive feedback about them! I’m so sorry you did not enjoy them.

  4. This sounds like me-do you want the healthy version or the regular? Then you just dont tell them they are the healthy version no matter what;) These look delicious and you have me craving a muffin now!:)

    • Haha! Exactly, it usually works too 😉
      I don’t normally think about muffins since they are so packed with junk when you buy them, but since eating these I have been craving them non stop…good thing they’re healthy!

      • I have been craving a bran muffin but like you said they are usually sugar and junk bombs so Im putting making one on my to do list:)

        • That is so funny! After I ate the blueberry muffin my mind went straight to bran and corn muffins (two of my favorites as a kid, so I made both!! I will be posting them in the next few days! You should make a bran muffin too and we can do a post! 🙂
